This book contains a whole research work carried out on Far infrared-convective drying of turmeic slices. An Infrared-convective dryer was developed and further turmeric slices dried. After gringind the turmric slices colour and curcumin content was determined. Heat & Mass transfer ratio , Specific energy consumption and optimization of the process parameter was also carried out. This is a use of novel technology for the world of spices drying.
